Nothing says fall like pumpkin spice. Every year I look forward to making these incredibly easy and delicious chocolate chip pumpkin muffins. So much that I usually make my first batch at the end of August… no shame here. The smell of cinnamon, nutmeg and pumpkin spice is one of my favorite parts about baking these muffins. The aroma that fills the house is candle worthy, plus the color of these muffins will look beautiful in any kitchen!
Now these aren’t your over-the-top cream cheese filled or streusel topped pumpkin muffins. These are simple, satisfying, chocolatey and everything you’d ever want in a fall muffin. I’ve tried other types of pumpkin muffins, but I keep coming back to this recipe. Not only are these muffins beginner-level easy, but they are also extremely versatile. These perfectly spiced and chocolatey muffins are fancy enough to serve up for Thanksgiving dessert but simple enough to make for an afternoon pick-me-up with a cup of coffee.
Easy & Delicious Chocolate Chip Pumpkin Muffins
Preheat oven to 350°. Spray muffin tins with nonstick cooking spray or use cupcake liners.
Combine flour, baking soda, baking powder, salt and pumpkin pie spice in a small bowl and mix.
Using a blender, slowly combine softened butter, sugar, eggs and pumpkin in a large bowl. Gradually add flour mixture and mix until just combined. Fold in chocolate chips.
Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
Allow the muffins to cool for 10 minutes in the muffin pan before enjoying.
