Healthy and delicious recipes for Valentine’s Day
Nothing against chocolate-covered strawberries, but we love these berries in their purest form—especially in salads and desserts. Unfortunately, it’s hard to find fresh, quality (and affordable) strawberries in the winter and around Valentine’s Day when this heart-shaped fruit seems to be in demand. We found a solution: All Strawberry, a new freeze-dried fruit snack from our parent Crispy Fruit.
Perfect for adding to salads, baked goods and ice cream
All Strawberry has a concentrated sweet flavor and delightful crunch, which we capitalized on in these recipes. Also, by removing the water content of strawberries (fresh ones are about 94 percent water) it makes the fruit more manageable in cooking and baking. In the All Strawberry Salad Topper, the sweet crunch offsets the savory sunflower seeds, and the chewy dried cherries. In the Strawberry Chip Ice Cream, we added 2 (.32 oz) bags of All Strawberry to the ice cream in the final 20 minutes of churning. The result is a creamy pink ice cream with crunchy strawberry chips. Â While both dishes are vegan you could just as easily add in crumbled Feta cheese to the salad and or make the ice cream with cream. Enjoy!
All Strawberry Salad
Combine the Salad Topper ingredients in a bowl and add a pinch of salt if desired. Add to a bowl of mixed greens.
Whisk together salad dressing ingredients.
When ready to serve, toss salad with dressing. Add Feta Cheese if desired.

Strawberry Chip Ice Cream
Blend the coconut milk, sugar and vanilla extract in a blender for 30 seconds.
Add to a chilled ice cream maker canister (that’s been chilled for about 24 hours) and process until it’s a soft-serve consistency. Stop machine and add beet juice powder (for added beautiful pink hue and superfood nutrients), strawberry or raspberry jam, and 2 bags of All Strawberry. Churn for another 10-15 minutes. At this point, transfer your ice cream to a freezer container, apply a piece of wax or parchment paper against the surface to prevent the ice cream from crystalizing. Seal the container and freeze till desired consistency.
Serve, topping with more All Strawberry Crispy Fruit.
