Want a healthy breakfast that tastes delicious and is ready in no time? These Strawberry Banana Sheet Pancakes are perfect! They’re whole-grain and fluffy and are baked on a sheet pan. No pancake flipping necessary. This dish would be amazing for a brunch gathering where you want to toss your meal in the oven and don’t want to spend any hands-on time. The whole meal is ready in less than 15 minutes total.
You can use the fruit of your choice but I definitely recommend the Crispy Green Strawberries and Bananas. They’re freeze-dried and are perfect for this dish. I make my own pancake mix sometimes like today but most days, I use Kodiak Cakes mix- 2 1/2 cups mix, 2 cups water, baked for 8-10 minutes at 350 degrees. It’s so easy! Cut the pancakes into squares and they’re ready to enjoy.Â
I recommend using a whole-grain pancake mix since it has more fiber and protein than an all-purpose flour mix. Feel free to make your own mix but if you’re always busy like I am, feel free to take this great shortcut that is still nutritious.Â
This pancake mix takes less than 5 minutes to make and is loaded with whole-wheat flour, eggs and lots of other goodness for a delicious and nutritious breakfast.
Strawberry Banana Sheet Pan Pancakes
1. Preheat oven to 350 degrees. In a large bowl, mix together the butter, flour, baking powder, sugar, milk and eggs.
2. Spray a medium to large sized sheet pan with nonstick spray. Pour batter onto your pan and bake for 8 minutes until pancake is baked through.
3. Remove from the oven and sprinkle with dried fruit. For a pretty look, crush some of the strawberries for a pretty red powder.
4. Cut into pieces and serve.
